Ingredients:

  • 2 ¾ cups of all-purpose flour
  • 2 teaspoons of ground ginger
  • 1 teaspoon of baking soda
  • ¾ teaspoon of ground cinnamon
  • ½ teaspoon of ground cloves
  • ¼ teaspoon of salt
  • ¾ cup of butter, softened
  • 1 cup of white sugar
  • 1 egg
  • ¼ cup of molasses
  • 2 tablespoons of white sugar for decoration

Instructions:

1. Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.

3. In a separate bowl, beat the butter and 1 cup of sugar until light and fluffy. Add the egg and molasses and mix until combined.

4. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Do not over mix.

5. Roll the dough into 1-2 inch balls and place them on the prepared baking sheet. Slightly flatten each ball with the back of a spoon. Sprinkle each cookie with the remaining 2 tablespoons of white sugar.

6. Bake for 10-12 minutes or until the edges are lightly browned. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
